Charter Oak Brewing, Danbury, CT has been brewing at several locations on a contract arrangement for the past 5 years. We forecast brewing in our new brewery facility in March, which will include both a 20bbl 3V and 5bbl 2V system along with canning and kegging lines. This position requires an experienced brewer with NO less then 3 years commercially brewing on a 10BBL or larger system (PLEASE, 3 year minimum experience on commercial brewing equipment only to apply, NO exceptions).
Highlights include
• Conducting all brewing, cellaring, and packaging operations
• CIP / sanitize brew house and tanks as well as clean packaging line
• Procure ingredients; assist in negotiating vendor agreements
• Recipe formulation
• Maintain a clean, well organized and sanitized brewery
• Record daily brewing details
• Monitor progress for all brews in tanks
• Managing raw material and packaging inventory
• Operating forklift
• Flexible work demands to include multitask for special projects
• Create and engage in SOP and preventive maintenance programs
• Hire, train, fire cellar and volunteer staff
• Lab experience
• Understanding of water chemistry and fermentation / yeast management
• Knowledge of sour beers and barrel aging program
• Flexible schedule (not always 9-Pam)
• Certificate in brewing science preferred
• Valid drivers license
• Attend events and ability to present at conferences
