  • Nitro beers using keykegs?

    Hi all,
    Is anyone serving nitro beers from keykegs?
    Haven't found any information on this anywhere on the web. I'd like to serve a classic nitro stout. In our brewpub we serve use mainly keykegs, where the liquid is never in contact with the gas that pushes it out of the keg, and therefore (in theory?) can't become over-saturated with CO2 at high serving pressure. Now, I have never in my life prepared a beer for nitro/mixed gas. I have read some threads on the subject, and believe that I understand the science behind the process, yet can't quite shake that going-to-work-naked bad dream feeling like i'm missing something blindingly obvious. So help out a fellow brewer.... Can I carbonate low with CO2, add nitrogen to the BBT (70/30 or pure N2 through the carb stone? will revisit the threads on that once I'm sure my logic is sound), fill into keykegs, and simply push with CO2 through a stout faucet? My BBTs are rated to 2.5 bar and I can chill to 0c.
