POSITION SUMMARY:
Pair O’ Dice Brewing (Clearwater, FL) is seeking a full-time Brewer to assist in all aspects of wort production, cellaring, yeast management, and packaging. Brewer will be cross-trained in all areas of production, and will report to the Head Brewer. This position is ideal for someone that enjoys doing something different everyday and working in a tight knit team/family environment.
ABOUT PAIR O’ DICE:
Pair O’ Dice Brewing was founded in 2013 in Clearwater, FL with a 15 BBL Premier Stainless brewhouse, four 30 BBL fermenters, 30 BBL Brite and 1 BBL pilot system. In 2016 a Wild Goose Canning line and DE filter joined in the fun.
QUALIFICATIONS:
• At least 2 years directly relevant work experience
• Exceptional communication skills
• Excellent sensory analysis skills to maintain quality
• Strong attention to detail
• Excellent organization and time management skills
• Excellent work ethic and high sense of urgency
• Full understanding of all CIP processes that are needed for operating the cellar & brewhouse
• Understanding of complete tank break down, inspection and the associated record keeping
• Fully competent in day to day cellar & brewing operations
• Full understanding of SOP’s of all aspects of the cellar & brew process
• Willingness to take on other production duties as directed by Head Brewer
• Strong troubleshooting and problem solving skills
• Full understanding of all cellar & brew equipment and utilities
RESPONSIBILITIES:
• Wort production
• Yeast management
• Monitoring of product throughout fermentation
• All aspects of cellar work – including CIP/SIP of fermentation, bright beer tanks and packaging equipment, dry hopping and fining in process beer, and racking and carbonating finished beer
• All aspects of packaging work – including kegging, canning, and bottling
• QA/QC duties, including sensory evaluation and lab work
• General brewery cleaning
• Attend industry events and give brewery tours as needed
• Raw materials monitoring, receiving and handling
• Collaborate with Head Brewer and brewing team on any processes that may impact beer quality
• Follow written SOP’s; accountable for SOP execution
• Monitoring brewing and processing of batches to control quality, consistency and efficiency
• Monitoring, executing and reporting daily, weekly, monthly and yearly cleaning and maintenance tasks
• Ensure and maintain the highest safety standards for production and brewery staff
• Communicate daily with Production Manager, Head Brewer, and Lead Brewer on scheduled tasks, issues encountered, and priorities
PHYSICAL DEMANDS:
• This position is extremely physical and demanding in nature and involves working with potentially dangerous equipment, machinery, exposure to high noise levels, and handling of hazardous materials
• Stands and/or traverses brewery for long periods of time
• Frequently climbs stairs/staircase
• Frequently bends, moves, transports, or lifts 60 pounds and move 165 pounds safely.
• Use repetitive motions
• Can work in both hot and cold temperatures

• Compensation will be based on experience
