    Thanks everybody who can help us out with an answer! Our brewery space is 42Lx51Wx14H. We need help determining what size CFM exhaust fan we need. By my calculations, we need roughly 7500. It’s a 3 burner, 3 bbl. We’ve considered electric all along but have found a gas system we really feel like we are behind the curve on what we need. We appreciate any ideas, suggestions and thoughts!

    Jessica, when you say 7500 cfm im assuming your talking about a fan powered vent system? the kettle itself, in most cases, shouldnt need any fan on its vent as the steam will have natural updraft. So if you go electric the only thing you should need to vent is the kettle stack- and no vent fan needed unless your vent is sideways for a long portion of the run. However when your talking direct fire that will need a separate vent, so youll need a kettle vent and a burner vent. Burners vary in type, size and efficiency and therefor vary in venting needs, i would contact your burner manufacturer to find out more about the venting needs of your particular burner.

        Galvanized pipe is usually a no-no for gas piping. Also, make sure your local inspector will be OK with it. Assuming, of course, you have one of those.

        If you have to pass inspection, I'd contact a mechanical contractor for help with this. Preferably one who likes craft beer.

          You do need forced draft exhaust over your kettle because the vapor stream can be heavy enough to roll out of your hood and cause humidity-condensation issues in your plant.
          You need enough CFM to capture what you are throwing off which can be calculated.

            You should contact a local mechanical engineer, or the building department. They will tell you exactly what you need to keep the city happy. In the end, they are the ones signing off on it.
