Born in the Heart of the Great Smoky Mountains™ in 2009, Nantahala Brewing brews award-winning, independent craft beer in Bryson City, NC. Our brewery is uniquely located in middle of one of the last untouched wildernesses on the east coast and is surrounded by the Nantahala National Forest and the Great Smoky Mountains National Park, America’s most visited National Park. We are currently seeking a Cellar person:

Job Responsibilities:

• Daily beer management: transfers, carbonation, bottling, canning, kegging, CIP, documentation
• Daily QA reads: gravity, carbonation, tank temperature and pressure
• Crash tanks, dump yeast and trub as needed
• Must be proficient with operating a DE Filter, traditional dry hopping and Torpedo (willing to teach our SOPs on this equipment)
• Prepare fermenters, brites, hoses for transfers and perform transfers as needed
• CIP, cleaning and basic equipment maintenance as needed
• Assist with maintenance and overall cleanliness of entire brewery and cellar including tank exteriors, floors, and milling room
• Maintain accurate written and electronic records: transfer volume, material loss, packaging
• Maintain accurate shipping and receiving records
• Stack bottles, cans and kegs using forklift
• Prepare shipments, load, and unload distributor trucks
• Keep a clean, safe work environment

Job Qualifications:

• 1+ year(s) cellarman experience
• Strong knowledge of cellaring and brewing process
• Ability to work in a fast-paced environment
• Maintain high quality work standards without direct supervision
• Ability to understand and adhere to Standard Operating Procedures (SOPs) and Material Safety Data Sheets (MSDS)
• Adapt to changes in brewing, packaging, and production schedules
• Positive attitude and strong work ethic
• Strict attention to detail and quality

Our Profile:

• 10 bbl 3-vessel brewhouse; 8,500+ bbls per year
• Ten 30 bbl FVs; Three 60 bbl FVs, Three 10 bbl FVs
• Two 30 bbl BTs; one 60 bbl BT; one 100 bbl BT
• 3 bbl torpedo
• Rotary Bottling Line (12oz/22oz/750ml) (32+ bpm)
• Small brewers lab

Physical Requirements:

• Ability to bend, kneel, climb stairs, and stand for long periods of time
• Safely lift, move, and carry up to 70 pounds repeatedly
• Work on a ladder and/or scissor lift periodically with safety harness up to height of 24 feet
• Operate forklift and other machinery as needed (we will train and certify)
• Ability to safely handle and use cleaning chemicals
