Islamorada Beer Company is a brewery born in the Florida Keys and with its Production Brewery in Fort Pierce Florida. The brewer position will be primarily responsible for wort production and separation through centrifuge. As with any role in the brewery this role requires comprehensive understanding of quality brewing techniques to ensure product integrity is never compromised. Process knowledge and experience are paramount and ability to translate knowledge into production practice is essential.
KEY DUTIES AND RESPONSIBILITIES:
• Brew house operation with strict adherence to batch process with diligent process monitoring and record keeping. 30bbl 4 Vessel
• Centrifuge operation with strict adherence to SOP to ensure desired clarity is achieved while minimizing DO pick up
• Brewing related maintenance including pump seal replacement, plumbing etc..
• Clean, sanitize, and purge tanks and process lines/hoses with strict adherence to C.I.P. and process S.O.Ps
• Fermentation monitoring, including; gravity checks, tank pressurization, and temperature adjustments
• Dry hoping following S.O.P with careful attention to D.O. pick up and sanitary technique
• Yeast handling, including; yeast dumps, harvesting, pitching,
• Carbonation monitoring
• Packaging responsibilities as needed including kegging, bottling, canning
• Never leaves work area dirty
• Barrel program management
QUALIFICATIONS / EXPERIENCE
• Successful candidates are self motivated individuals with a passion for craft beer and enthusiasm to learn.
• Experience working in a professional brewery required.
• 4 year degree is desired
• Team focus and uncompromising appreciation for quality is a must.
• Ability to work unsupervised
• Knowledge of sound brewing process
• Genuine enthusiasm for craft beer.
