  • Sapodilla fruit beer (Manilkara zapota)

For those whom can get it, the flavor is exceptionally malty, sweet and very tasty. The fruit's flavor has been compared to cotton candy or caramel. The unripe fruit is hard to the touch and contains high amounts of saponin similar to tannin which dry out the mouth.

Basically 2 row, dextrin, Munich, wheat, secondary fermentation with pureed then frozen sapodilla. One tiring brew to make but well worth it.

I received the inspiration from Stan Hieronymus’s Brew Like a Monk as historically brewers used what they had rather then import or ship. Fantastic head retention, color, and wicked flavor.
