Looking for some grist sieves so I can set my mill gap more optimally. I'm looking for the ones you shake by hand, not the ones you plug into the wall for shaking. I know I've seen companies selling them, but can't remember who.

The most commonly used test sieves in the US are WS Tyler. Depending on whether you use EBC or ASBC methods, you'll need either five or six sieves, plus pan and cover. ASBC sieves required are #10, 14, 18, 30, 60, 100. Then you'll need ASBC recommended fractions for each. Google for a source--McMaster has them, but they are expensive.
