  • olives-like flavour

    I have found some strong notes of olives in a couple of homebrews and was wondering where do those come from. Also what it is. My guess is those should never be in a beer??

      oxidized fatty acids? (rancid)

      there's little typical homebrewers can do against oxidation.

          I am not the brewer. I have have tried some homebrews in my area and this strong olive-like flavour/odour tends to be in like 70 % of them, making those beers very unpleasent to drink. Not to say all the phenolic compounds I have been able to detect. Just do not know where do this particular flavour comes from.

                My guess would be it's Brett. I've tasted alot of Lambics with olive-like flavors.
