    HI:

    I'm looking for some history on Oyster Stout, any links???

    Also, does of you who served Oyster Stout, how did you serve it;
    Oysters with the Stout or ??????????????????????

    Any help is appreciated.

    I read an article in Zymurgy within the last few issues about Oyster stout. A lot of interesting techniques discussed, though it sounded a little expensive on a comercial level. I want to say they interviewed the brewer from Firestone Walker, maybe.

          July/August 2008 - Brewing by Design talked about Oyster Stout

          September/October 2008 - Dear Zymurgy had a followup with a recipe w/120 oysters per 5 gallon (20l) batch...better get schucking!!!

              THere was a brewery in Ireland making an oyster stout while I was there.

              They used half a dozen oysters (live) thrown into the brewkettle for the duration of the boil (10 hL).

              Seriously.

              Lovely stout. Not 'fishy' at all.

                    We make 7 bbl. at a time and hang the oysters, in a mesh bag, in the kettle during the boil.

                      Isn't it really just using CaCO3 in the mash? (Ground up Oyster shells)

                        By using whole oysters in the kettle you get the liquor, from the oyster, as well as a small amount of salt and mineral.

                          As well as the brewery Liam mentions above . . .
                          (which I presume is Porterhouse, near Dublin - http://porterhousebrewco.com/popoyster.html ) . . .
                          there have been a fair of UK breweries that have either gone down the "serve with" route - Adnams & Marstons & about 16 others I'd guess, according to www.beermad.org.uk
                          but a couple have added the little fellas to the beer - Ventnor Brewery (Isle of Wight) say that their "drayman Colin swears by Oyster Stout and calls it 'Black Viagra'! Every bottle works!"

                          (seems to be some problem with their website at the moment - www.ventnorbrewery.co.uk )

                          MJ's books mentioned Pike Place & Marin as US innovators of the (oyster-in) style & has a good 1995 piece about another UK island based brewery having a go - http://www.beerhunter.com/documents/19133-000740.html
