    Hey everyone, I'm trying to help open up a small brewpub in Brunswick Maine and I need some help filling out the Commercial dishcharge application. We will be running a 7 BBL Pub system with 3 15bbl fermenters and 7 7BBL serving tanks. We are planning on producing roughly 500-750 BBLs of beer our first year, as we will have lots of guest taps besides the house beers, so production will be relatively low.

    If anyoone can send me their waste water applications for similar sized setups, that would help me a lot.


    I am attaching our application as well as the towns rules and regulations, if anyone cares to take a quick glance at it.

    My main questions are... (sorry, this is my first time dealing with this, so I kind of have a lot of questions)

    sec. 6. Provide an estimate of the average "sanitary wastewater flow" expected to be produced daily...

    What exactly is the diferance between sanitary and process
    wastewater?

    sec. 7. a. the Standard Industrial Classification (SIC)

    Not sure what this is.

    sec. 9. describe controls proposed to maintain BOD and TSS of discharge at allowable concentrations.

    What are your typical BOD and TSS numbers? I am assuming BOD should be under 1500 ppm, what about TSS? what is the best way to control these numbers?


    sec. 10. provide laboratory analysis of process water or wastewater sampling for process to be used in the applicants operation, or, if not available, for a similar process. Note PH expected for the process dishcharge. Attach actual reports.

    Does anyone have these report(s) and/or where can I get them?

    sec. 11. ...describe wastewater pretreatment...

    Hoping that our BOD/TSS will be allowable, our main concerns
    should be temperature and PH, correct? For such a small operation,
    what measures would you suggest for controlling these factors. I
    figure water temp will be under the 150F limit, and PH should fairly
    neutral after caustic and acid. Am I on the right track?

    sec. 12. provide estimate of average daily and maximum daily "process wastewater flows"... ... list known and suspected waste components that will be generated and the means by which each component will be disposed.

    Again, what exactly is meant as process waste water? I assume
    that waste components will be spent grain, trub, yeast, wort, beer,
    and whatever caustic and acid chemicals that are used. Any
    estimates on quantities/concentrations of beer, wort, and chemicals
    that ends up actually going down the drain... assuming the solid
    matter goes to a farm or similar destination.

    sec. 16... regulated wastes... on page 10 of "commlpermitapplicn"

    I think we will be above the 400ppm suspended solids and 600ppm
    dissolved solids? Unusual oxygen demand? caustic alkalinity >100
    ppm? PH <6 / >9? Again I really need to see someone elses
    figures/practices. We really would like to get through this without
    having to do much, if any, treatment of our wastewater... though
    this may be in fact impossible.


    sec. 18 List other environmental permits or licenses held or required...

    will we need anything like this?


    I know this is a lot to ask of anyone, but I am a little stuck on some of this stuff. For the most part the town has said we should have nothing to work with, but we are on a tight budget, so the less we have to spend on processing waste water, the better. Thanks for any help anyone can give me.
