  • Looking for some general advice

    Hello I am an engineering student at McMaster University in Hamilton Ontario Canada.

    As a class project we have to design a process capable of producing 5 gallons (20L) of beer per month.

    We have decided that due to both cost, time, and knowledge limiting factors to brew an ale from extracts using basic home brewing techniques.

    We after a standard boil ~ 1 hour we plan to cool the wart in an ice bath and then ferment in a plactic fermentation bucket ~ 2 weeks. Then bottle condition the beer for about another 2 weeks.

    Now comes to our sticking point. We have done research on the brewing process and the importance of yeast and sanitation. but we havent been able to fine a recipe that we feel will be able to meet or basic needs from the vast quantity floating on the web. All we really want is an Ale recipe that isnt to bitter and isnt to dark. The point is to be able to sell this to college kids bitter dark beer isnt going to go over great.

    Any advice would be greatly appreciated

    Charlie Papazian's third edition of 'The Complete Joy of Homebrewing' would be well worth your investing in (or obtaining from the local library). It will discuss all you need to know plus offer a number of recipes...

      Hi Mac EN,

      Terry Foster has written a great book on PAle Ales. It is part of a series dedicated to specitic styles. He has some very simple recipes for a bitter or a mild, just the kind of thing your lookig for.
