    Our X-Mas ale is in the fermenter. It's started quite high at 20P but I wish to add about 7% sugar points (invert sugar + pure cane sugar)

    When would be the best time? Should it be when my yeast count is at it's peak?

    I'm also planning to add fresh yeasts and nutriments at the same time

    I usually add sugar in the kettle, but there shouldn't be anything wrong with adding it at high krausen. And unless you want to add a different yeast for complexity, I wouldn't even bother with dosing the same yeast--there should be plenty to finish off the job nicely. Good luck!

      I usually put sugar in the kettle, but this time I wanted to give the yeast a leg up (was afraid about the impact of invert sugar on growth)

      This fermentation started slowly this time and I now by experience that my hi-gravity beers tend to finish real slowly, like 0.2P/day : that's why I want to add yeast this time. And yes, it's for some coplexity too, this new yeast being more estery and more attenuative.

      I'll push everything in today, after 36hrs of fermentation.
