New brewpub utility questions

I have a new brewpub that is going to be opening...we are using a used pub system with 2 7bbl fermenters and 2 9 bbl fermenters. The kettle and tun are 5bbl. We have 10 7bbl serving tanks (but we don't know that we will require all of them) but we need to get some thoughts on utilities running to the brewhouse...drain sizes, water main sizes, etc...anyone have any thoughts?

I don't want to hire a consultant but don't want to miss the mark too much.
