  • Pickled Hop Shoots

    The shoots are already rearing themselves, this is a 2nd year crop and with 30 plants, I will have lots of 'thinning' to do, who has pickled hop shoots before and what brine is recommended? Yummmm! I can'not wait.

      I think in Germany they simply saute them fresh, and serve them like asparagus.

        Pickled hops shoots are served all over Yakima, WA...even as a pizza topping. i would give a call into Bob at Bob's Keg and Cork in Yakima...he can probably point you in the right direction.

              Pickle time set.

              Thanks for all the responses. Next week will be 'hop shoot' harvest, then into the jars. I will use a brine of; Great Basin 'Icky' IPA, salt, local honey, mustard seed, cumin, black pepper, corriander, bay leaves and dried tabasco peppers from last years harvest.

                  It is a great harvest of hop shoots, going to get to pickling tonight, have about 5# worth. Tried some at Bob's Keg and Cork in Yakima and they were delicious. I think this is worth growing 5 or 10 vines at your house or brewery just to make this.

                      It is Time

                      Just a 2014 reminder. These early hop shoots are delicious, Get some in the ground at your brewery or pub for a little extra condiment. Used all rice vinager this year with no salt, and standard pickling spices. Still needs some work but good.

                        I will definitely be doing some pickled hop shoots again this year. last year, I did a similar no salt and rice vinegar with lots of mustard seeds and coriander. Pretty good.

                        Only problem… there's still 2-3 feet of snow bank in the way. At least it was above freezing today.
                        Bring on the spring!
