We always start our lager fermentations with wyeast 2206 and 2278 at 60 degrees F until the fermentation starts (usu. 24 hrs) and then cool to 52-54 F for the bulk of the fermentation.
A rep from wyeast said these yeasts can ferment as high as 57 F without any sulfur or off notes created.
Anyone have any experience with fermenting these yeasts at that high a temp?
