Production Bonuses

I am in the process of negotiating a contract and I'm getting in to the production bonus area and I was just wondering what everyone else is doing out there. I was thinking a piece work type of bonus scale related to production. Any who let me know what you think.

Production is the easy part. Sales is the hard part. (At least for me) If I can make more beer than can be sold, do I get a bonus? I give out a monthly bonus if we gross +20% month over last year. It gets my employees out in the market checking stocking levels and pushing our product into new markets. Seems to work for me. Good luck!

Yeah I agree about the sales part but this is an up-start that is selling eveything we make that we can package (thankfully we have this problem!) and therefore the emphasis is on production and qc/qa for consistency right now. So I was thinking everything that we sale above the profit margin then the bonus would be a certain percentage of that. Does that sound fair?
