  • Brewery Utilities / Raw material vs sales

    I am in the process of opening a 15 barrel brewery in the Mid West. We have a 12,000 square foot building and are looking to produce aproximately 1000 barrels our first fiscal year.

    Would anyone have an idea as to what our monthly utilities would look like?

    We are also looking at our cost of raw materials vs our case sales. Right now we have our raw materials (packaging, hop, malt, barley) calculated at about 40% of our case sales. We will be packaging in 6 pks. Does this seem like a fair value?

    Any help would be greatly appreciated.

    Utilities

    I think I got the following numbers from JV Northwest and I am not sure of thier accuracy but it may be a starting point. You will need to use the cost of your utilities in your area, just call the utility company and get a rate sheet.

    Electrical 20 - 35 kWh/bbl
    Natural Gas 2 - 3.7 Thermos/bbl
    Water 6 - 8 BBL's water/bbl beer produced

      I am also in the start up phase and with my calcs... go to the high side of the JVNW numbers and you should be fine.

      For your COGS, obviously it depends on what you include. For my COGS, I include everything that is used to make the batch of beers, except electricity. I keep insurance and the like as a separate line item... though I include the taxes since I have no choice but to pay those.

      and I am sitting around 43-46% on a classic six pack(of cans in my case)

      I am buffering it by calling 51%...

        My experience in utility cost is more in line with www.soundbrew.com

        Energy Use:

        Brewpubs:
        Electrical: 10-15 KWH/BBL
        Chiller: 8-20 BTU /BBL
        Natural gas: 1.3 therms/BBL
