    Hello,

    I just got a few bourbon barrels and don't have any experience with barrels. I want to use them and need some help. They are Jim Bean bbls and one has a date of a few months ago stamped on it so I figure they are not that old. They have the bungs still in them as well

    First off how do you get them ready to fill with beer. Do I need to worry about infection? I thought about using hot water to sanitize them. I've also seen people talk about citric acid. Please let me know any specifics if you can. As I said I new to it and know nothing.

    Also, What kind of beer do you like best out of the bbl. Is a high alcohol beer necessary or would a nice 5-6% ABV stout work well. I know there are a lot of barleywines and Imperial stouts, but does anyone have experience with other beers.
