    I am looking into putting a fan into our kettle stack to aid in evaporation. 30 bbl kettle with a 10" stack, if anyone has any recommendations on fans I would appreciate it.

        A correctly designed stack would draw properly. Then again, due to building roofline geometries, it can't always be done well. I used an installed ventilation fan with a wye to help suck out steam from the brewery. Works great and the fan doesn't heat up too much or drip due to the dilution of steam with air from other intake vents. Then agian, I remember another thread on the topic... Good luck.
