  • P&F issues...

    We're relatively new to production scale brewing, and having problems filtering 7bbls of beer through our 19 plate 40x40 filter, using nominal 10 micron pads. We end up grinding to a halt usually after 4-5 barrels, depending on the style, and end up blending the unfiltered beer back in as is. We're getting a very thick, slimy paste on the surface of each pad, which we think is yeast residue.

    Obviously this isn't where we want to be. Is there a trick to getting the yeast to drop better? We chill to 34-36F, drain trub, wait 24 hours, harvest, wait 24 hours, drain whatever is left, then into the P&F off the racking arm. We're typically using Wyeast 1098 or 1056.

    Any help would be appreciated!

    Blinding The Pads

    Your most likely blinding your pads. Some things that come to mind and are by no means a definitive answer are:

    Confirming complete attenuation?

    Temp issues with your tank, it may be 34-36 degrees in the center of the tank, But is it at the top? Is it at 36f the cone? (this is a less likely issue however with a 7 bbl tank)

    I know 1056, even when the beer appears finished by gravity readings, still has a bit of krausen hanging out on top of the beer. Before you crash you could try rousing with co2 to intermix that yeast and get it to drop better. Also I prefer to crash over to days, down to 52F in 24 hrs, and then to 34F in the next 24 hrs. Also you may need to let the beer rest longer after harvesting as well before filtering.
