JOB DESCRIPTION BREWER AT FANØ BRYGHUS
A POSITION AS HEAD BREWER IS AVAILABLE ON FANOE, DENMARK
Our fantastic Head Brewer is leaving Fanoe and Denmark for a new Head brewer position
in the UK.
So now there is an opportunity for a highly qualified, innovative, quality conscious brewer,
with a high degree of practical and theoretical knowledge of brewing. In addition passion,
creativity, a great personality, humor, and a high degree of determination will count
towards the advantages for the successful applicant we are offering the position as Head
Brewer on Fanoe Brewery.
The dedicated brewer will join us in further putting Fanø Bryghus on the world map in the
craft brewing industry
The successful applicant will start in September (date to be agreed), and will work together
with our Head Brewer for one month in preparation for taking over the Head Brewer
position November 1st.
We brew a number of American style ales, a good deal hoppy. But also other styles, and
the position will give the successful candidate a fantastic opportunity to challenge a 10hl
Kaspar Schultz brew house, and maintain the high standards and the good name Fanø
Bryghus has established during the past three years.
RESPONSIBILITIES:
Full responsibility for the production of the Fanø brands and contract brewing
brands and for the packaging of these
Production planning
CIP cleaning of fermentation and conditioning tanks, and upkeep and cleanliness of
the entire brewery – many visitors during the tourist season
Yeast management
Weighing and milling malt
Operating the brew house and transferring beer
Keg washing and filling
Working effectively with management to meet production needs and ensure
sufficient beer supply
Commissioning of new/additional equipment in cooperation with the Brewery
Director.
Purchasing raw materials necessary for the brewery
Quality control and reporting as per ‘Egenkontrolprogram’ (QC program) produced
by the management
Liaison with all relevant authorities –food safety (“Fødevareregionen”, health and
work safety (“Arbejdstilsynet”), fire authorities (“Brandtilsynet”)
Assistance with events and brewery tours for tourists (along with other staff)
Paperwork and administrative duties as required by management (brew –and
transfer logs)
NECESSARY QUALIFICATIONS FOR CANDIDATES:
At least 12 months of practical experience working in a small scale craft brewery
A formal brewer education (Diplombrygger or other documented brewing education)
is preferred, but not required
A very strong understanding of the entire brewing process
Strong mechanical aptitude
Focus on constantly improving procedures and efficiencies
A commercial and economical attitude to the brewing process
THE CONDITIONS UNDER WHICH THE JOB IS TO BE UNDERTAKEN ARE AS
FOLLOWS:
At present there are six year round beer types and 2 seasonals, under the Fanø brand
name. Using two different yeast strains.
In addition we brew for various gypsy brewers, and we have in the past two years brewed
more than 50 different beers for Evil Twin, Mikkeller, Stillwater Artisanal and others.
The annual capacity is around 200.000 liters (2.000HL) finished beer. Production reached
1,750HL in 2011.
The brewery was commissioned as brand new in 2006, and consists of a 10 HL fully
automated Kaspar Schultz brewhouse, 3 x 2.400 L gross fermenting tanks + 9 x 2.000 L
net cellar tanks used primarily for conditioning.
Packaging takes place in bottles, 33 cl and 50 cl (an 8 head Cimec bottling line) and kegs,
20 liter steel kegs, and 30 liter one way KeyKegs primary for export.
Salary offered is 25-30.000 DKK/month (incl. the company contribution to a pension
scheme after six months).
Living accommodation is available in an apartment in the same building as the brewery.
Rent at a reasonable rate will be deducted from the monthly salary. Heating, water and
electricity not included in the rent. The apartment comprises of a master bedroom, a single
bedroom, kitchen, bathroom and living room.
Depending on the qualifications and living situation of the brewer either a limited contract
minimum for 12 months is offered, or a normal, fixed job contract (Funktionærloven).
Assistance from a full time warehouse and packaging assistant.
