Thunder Road Brewing Company www.thunderoadbrewing.com in Brunswick Melbourne is looking to add to its talented and professional staff to assist in the operation of brewing and cellar equipment efficiently, accurately, and safely to produce quality beer according to our operating procedures and parameters.
1. Lead Brewer
Position Requirements:
Bachelor’s degree or coursework in a science discipline or engineering is desirable; or equivalent years of experience.
A General Certificate or Diploma in Brewing from the Institute of Brewing and Distilling or similar institution preferred.
4-6 years in-depth brewing industry experience.
Must be able to work flexible shifts with varying hours.
Must be able to accurately and legibly record daily record information.
Must have excellent cleaning and organizing standards, and be efficient in the processing of all operations.
Must be able to work unsupervised.
Reporting to the Production Manager.
Be capable of supporting TRB’s mission statement and brewing values.
Specific duties include:
Brewhouse operations: Milling, Mashing, Lautering, Boiling, Whirlpooling, Knockout, Grains out(with yeast), Brewhouse Vessel CIP (including Heat Exchanger) Cellar-Related operations: Filter operation, Fermenter CIP/Scrub/Sanitation , Cell Counting, Checking Gravities/Monitoring fermentation (Including Glycol Controls), Spunding/ Chilling/ Dry hopping schedule and procedures, Yeast Disposal(Grains out), BBT Cleaning and Sanitizing, recording fermentations, Reading BBT levels and recording, Checking DO and Co2 in beer. Packaging operations: Carbonation of beer, Cleaning kegs and filling beer into kegs, Checking CO2 in beer. Quality Assurance Operations: Cell Counts, Pitch Rates, Gravity Measurements, DO Measurements, Process Sampling, Yeast Viability Measurement, Taste Panel.
Experience : Minimum 5 years brewing with appropriate brewing or tertiary qualifications

2. Assistant Brewer
Position Requirements:
This is an entry level position with potential for advancement to the right individual.
6-12 months related experience
Commencement of a formal brewing education is highly desirable.
Must be able to accurately and legibly record daily record information.
Must be able to follow directions exactly.
Must have excellent cleaning and organizing standards, and be efficient in the processing of all operations.
Reporting to the Production Manager.
Be capable of supporting TRB’s mission statement and brewing values.
Specific duties include:
The main responsibilities for this position include A LOT of cleaning, shoveling spent grain, cleaning the spent grain and fermentation and yeast area daily, setting up and then cleaning up tasting panel, assisting with keg filling and packaging, scrubbing drains, and anything and everything else that our brewers need assistance with. If you do a great job cleaning, you may be asked to assist with some Brewhouse operations (milling, mashing, boiling, etc), cellar-related operations (cell counting, yeast disposal, etc), packaging operations (keg cleaning and filling, carbonation, etc), and quality assurance operations (cell counts, pitch rates, test panel, etc).
Experience : Minimum 2 years Brewing with appropriate brewing or tertiary qualifications.
