    Hey I am looking for some % figures to compare with. What is your:

    Brewery Labor
    Kitchen Lab.
    Mngt salaries
    Front of house

    All with relation to total sales
    and
    Food COGS (in relation to food sales)
    Brewery COGS (in relation to beer sales)
    Liquor COGS (in relation to other bar sale)

    Any help would be great!

      Alright I know I have been asking alot of pain in the ass questions of which you probably have to get up, dig up, and look at the past years profit/loss statment....but come on. Help me out..... Someone has got to know this stuff.

      Kaiabrew??? I know you have some #'s to help me out ....

        Is there somebody out there to write my business plan or at least hold my hand? Just joking, but that which you ask will vary quite a bit with size, market, and concept.

          well I already have numbers which I have compared with a similar concepr (steakhouse) but the numbers seem high. 42% food cost, 12.5% kitchen labor cost, etc. Does this sound accurate?

            Numbers

            There was a brewpub once that had operating numbers like this:

            11 % Bar
            46 % Food
            43 % Craft Beer

            Percentages are based on gross sales.

            The COGS for those areas is something like this:

            28% Food
            13% Craft Beer
            10% Liquor/Wine

            Labor cost broke down like this:

            30% Kitchen
            17% Bar
            10% Brewery

            In Actual numbers, labor cost this:

            Brewery:$23,850
            Kitchen: $20,000
            Bar: $12,000
            Administrative: $34,000
            Public Relations: $20,000

            The above is what each department head was paid. Monthly Labor is about $37,000 total.

            As a general rule, you want to operate with a 32% Food Cost, 10-15% Brewery Cost and as close to 10% Bar cost.

                Your Head Brewer only makes 23K?

                What's that work out to.....about 7.25 hr.?

                    The last two brew pubs that I worked for only paid around $25K (this was five years ago). I got fed at both places, too!

                    It worked out to about $12/hr for 40 hrs.

                    Neither place did a whole heck of a lot of business (neither is still in business, in fact), but as a result I didn't have to work very hard. In the second place, I doubt if I had more than 15 hours of actual work each week (spent 40 hours a week at the place, though). We always had a lot of tasty beer on hand, I wasn't slacking, just not a lot of work to do. The place had a 15 BBL system!

                    Ultimately, the low pay was a drag, but the boredom drove me out of there...
