In the past few months, I have been trying to correct a lot of our procedures for better consistency. The next thing on my list is to get our sparge pH into the correct range. We use lactic acid in our mash to bring the pH down to 5.4, but by the time we sparge with our tankless waterheater, the pH of the liquid in the boil kettle is normally closer to 5.9 or even higher.. Our final pH after fermentation is sometimes as high as 5.4. Obviously, this isn't ideal. I have seen people question the use of tankless water heaters, but I have never seen anyone post a solution for adjusting pH. Anyone out there using tankless water heaters and adjusting your sparge pH? If so, how are you doing it?
