    in today's ads there is another very inexpensive dairy tank, this time jacketed and glycol chilled with what looks like a single temperature probe. I have been reading a lot about open fermentation lately and it seems to me that you could build a little enclosure for this, tile the whole thing so as to make it easy to sanitize the whole room, have an exhaust fan to blow the CO2 out, make up air via another fan blowing through a hepa filter with fan speeds set up to create positive pressure, an all for less than a comparable cylindroconical fermenter at today's prices. Is this totally nuts, or just stupid?

    Not at all...


    Upright Brewing has a similar setup (or at least they did when they first opened). They have a segregated room with filtered makeup air. One of the walls had a large window to look in on the fermenters without opening the door. They even installed a mirror above the fermenter so they could see into it from the outside.

    Sierra Nevada and New Glarus do it on a much larger (and probably much more tech-savvy) scale.
