The town was a boom mining town in the 1800's which was never modernized and so has about 100 Main Street buildings dating back to that period, and is very quaint. We own a 10 bbl brewery and 100 seat restaurant right in Main Street and are looking for an assistant to the General Manager. The business is in its 4th year and is growing, but is still a family based operation and very personable. The Assistant Restaurant Manager is responsible for managing the daily operations of our restaurant, including the selection, development and performance management of employees.
In addition, the incumbent will oversee the inventory and ordering of food and supplies, optimize profits and ensure that guests are satisfied with their dining experience.
The Assistant Restaurant Manager reports to the owners of Galena Brewing Company, and will be responsible for the management of up to 10 to 15 employees per shift.
Duties:
Pursues the elimination of all underage serving or over serving of alcoholic beverages to customers.
Maintains order in the restaurant at all times, and protects the security and safety of all employees and customers.
Builds and attains annual restaurant sales goals.
Coordinates GBC events & private parties as well as annual staff events and community projects.
Commands the customer environment, music and lighting, and temperature as needed to maintain the appropriate atmosphere and service levels
Resolves any customer complaints that are “passed up” from staff and/or asks for help from a Managing Owner
Provides hands-on help if needed by any of the bartenders or service teams, including facilitating the resolution of conflicts between or within teams
Manages the restaurant floor, greets and hosts guests and delivers the Galena Brewery experience to each
Knows regulars by name and tracks their seating and dining preferences
Serves some shifts as a bartender, and so is able to prepare all specialty beverages
Oversees the procurement and maintenance of the inventory of bar beverages & ingredients, linen, china, glassware, and silverware
Oversees the procurement and provisioning of food, equipment, and cleaning and other supplies for the FOH & BOH
Leads the FOH & BOH in continually improving customer service
Leads the FOH & BOH in continually improving operational efficiencies by minimizing:
o Beer wastage
o Over pouring of all beverages
o Glassware breakages
o Staffing
o Equipment abuses
o Food wastage
o Utility wastage
Leads the FOH staff in cleaning and maintaining of all front of house areas, furniture, equipment and fixtures, and coordinates with the Chef, Brewmaster and cleaning crew for the BOH operations
Monitors compliance with OSHA, ILCC, County/City health and fire regulations regarding customer seating and service, food preparation and serving, and building maintenance
Monitors food preparation methods, portion sizes, garnishing and presentation of food to ensure that food is prepared and presented in an way that exceeds customer expectations yet meets product pricing constraints
Coordinates all accident, fire, violence or dispute related and other events efficiently to protect all members of staff and customers. Complete appropriate documentation of such events accurately and on time. Ensure a safe working and guest environment to reduce the risk of injury and accidents.
Coordinate assignments of kitchen and food runner personnel to ensure economical use of food and timely preparation and service
Maintains FOH and oversees BOH food and equipment inventories, equipment maintenance and cleaning schedules and their execution
Leads periodic all hands staff meetings
Establishes and maintains good communication and a positive working relationship with the General Manager, Chef and Back of the House staff, the Brewmaster, and all members of staff
Leads and implements GBC goals and actionable steps for the front of the house.
Is Illinois Food Service Sanitation Certified, and will uphold all of the certification guidelines.
Works with Brewmaster to schedule and change out beer seasonals as required, making appropriate changes to POS and other systems accordingly.
Works with the Kitchen Staff regarding daily specials.
Daily tasks:
o Reconciles cash drops on a daily basis to assure that it agrees with the POS
o Reconciles employees end of shift sales and check out procedures
o Audits all credit card transactions, and tips on a daily basis
o Settles the credit card batch on a daily basis
o Replenishes the Cash Back Up bag
o Makes deposits to the bank
o Updates, and corrects the POS as required
o Monitors glass breakage, beer & food wastage and adjusts to eliminate
Staff Management Duties:
Provides direction to employees regarding operational and procedural issues.
Interviews hourly employees. Direct hiring, supervision, development and, when necessary, termination of employees.
Conducts orientation, explain the Galena Brewing company Philosophy, and oversee the training of new employees.
Develops employees by providing ongoing feedback, establishing performance expectations and by conducting performance reviews.
Oversees training and performance reviews for entire front of the house staff including servers, hosts, bussers, and bartenders, following the principles of Servant Leadership, and Stewardship.
Maintains an accurate and up-to-date plan of restaurant staffing needs. Prepare schedules and ensure that the restaurant is staffed for all shifts based upon anticipated business volume and coordination of balanced service teams, using the ShiftPlanning online scheduling system. Maintains staff ratio goals.
Qualifications: The Successful Candidate for this position:

Has a solid record of success in a restaurant management role within a high-end restaurant service environment
Understands and has managed an entire front of the house staff, including Servers, Hosts, Bussers, and Bartenders.
Has extensive food, wine, beer, and spirits knowledge
Provides leadership that inspires teamwork, generates energy, enthusiasm, and drives result
Has successfully done budgeting and forecasting and has a history of delivering on those forecasted results
Has a reputation for excellent relations with customers, vendors, other businesses, and Kitchen staff
Holds a Bachelor of Science degree in hotel/restaurant management. A combination of practical experience and education will be considered as an alternative.
Has a working knowledge of business computing (MS Word, Excel, Google Documents)
Has a proficiency in the following: food planning and preparation, purchasing, sanitation, security, personnel management, record keeping, and preparation of reports.
Has the ability to design, implement, and to continuously improve menus, and procedures
Has experience in the training and development of staff members
Is self-directed and able to work independently, as well as be an integral member of the brewery management team
Must possess a valid driver’s license.
Must agree to background and credit check.
Must be eligible to work in the United States.
