Hi,

I'm mostly bottling but have been kegging the odd keg or two for different things. Kegs have been coming out fine.

I'm kegging at around 15psi and with about 2.5 volumes of CO2.

Had a small batch of kegs that were flat when I tapped them - user error when filling no doubt

Now Im nervous that some of the others might be flat too.

Given that pressure at kegging would have been 15psi, if I put a tapping head with a pressure guage on the keg should it still be the same or should I expect it to have changed?

Of course this would depend on your beer temperature. You should reference a carbonation chart to determine the carbonation level in a keg that has had time to reach equilibrium. Good luck!

Be sure you're filling your kegs fully. If there is very little headspace, very little CO2 can escape from the beer before headspace/beer reach equilibrium, so head pressure is less important.
