    i would like a good book that discusses all scientific aspects of brewing.
    any good ones??

    2 brewing texts that I refer to for scientific applications are:

    Brewing- Chris A Boulton, et al

    Technology of Brewing and Malting-Kunze

    I like the Boulton text the most but it is expensive~$300 if bought new. It's a recently published edition but you may get lucky and find a used copy somewhere.

    Another good text that is much cheaper- Standards of Brewing by Bamforth

      Every brewer should own Joseph DeClerk's brewing science collection and anything by Ray Daniels or Greg noonan,...or Charlie Papizion...or .......

          Brewing Books

          I found "Principles of brewing Science" by George Fix to be very useful for the scientific side of brewing and it's not too pricey.

            Books

            When you get bored with the technical stuff...try Radical Brewing by Randy Mosher. It is geared towards the home craft brewer but has loads of info on styles that have disappeared and crazy things to try. I find it one of the most inspirational books on my shelf (so to speak, it is rarely there)...
