  • How soon is too soon to dump and repitch?

I currently have a 1 barrel batch of Wheat that went into the fermentor today using a Kolsch yeast. I plan on brewing a second batch (different style same yeast) within the next few days. How soon could I dump some yeast to repitch into the other fermentor? I am guessing my first batch will still be very much in the primary stage of fermentation when I want to brew the second beer.

I usually repitch the yeast after I cold crash and collect but have never done this process while in the primary stage. Are there any concerns or reasons why it shouldn't be done? Is there a better day (timing wise) to do this?

By harvesting early, you run the risk of collecting mostly dead or unhealthy, non-fermenting cells from the bottom of the cone. Even the "good" yeast you harvest will be the least flocculent portion of the culture. With a healthy, active fermentation, there may not even be enough yeast settling out at this point to collect a pitchable cell count (though this is strain-dependent and I don't really know how Kölsch yeast behaves in that respect).

You should wait to harvest until the beer has reached FG. Provided you don't re-pitch off of the second batch, you could probably get reasonably good results by harvesting a day or two earlier, but I certainly wouldn't recommend it.

Beer is like porn. You can buy it, but it's more fun to make your own.
