I'm trying to determine how much glycol I need to order. Our chiller has a 100 gallon capacity, so assuming a 35-65 mixture, that comes out to 35 gallons of glycol. But how do I account for the piping and jackets that take up additional space?

Yeah, get the 55 gallon drum. It's always a good idea to have some extra glycol around. The way to do it is to half-fill your system and start it circulating through everything with the chiller off. Then add the glycol to get the right mixture and top it up at the same time.

Extra
There can and most likely will be situations that you do not plan on which involve the loss of some or a large amount of your system glycol.
