  • General Question - Malt

    I am trying to find information on the approximate percentage of base malt vs. specialty malt in the following beer styles (and what is the "usual" malt variety/type being used in each style): Lager, pilsner, ale, stout, porter, wheat and bitter.

    Does anyone have this information? (or know a good source for this information?)

    There are many variables to consider when answering your questions. For one "Lager" is a general term that refers to beer brewed with Lager yeast such as Pilsners, Octoberfests, Bocks, and good old Budweiser. A Bock could have 100% munich malt and no base malt. A pilsner could have 100% base malt and no specialty malt (if it did have specialty malt it would be a low %) A wheat beer generally has anywhere from 30-50% wheat malt with the balance being base malt. A bitter would probably have anywhere from 90-100% base malt with a bit of Crystal malt. A porter could have up to 30% or more specialty malt. It all depends but hopefully this will help. You could pick up Ray Daniels book "Designing Great Beers" for a good look at standard commercial and homebrew recipe formulations.

      i don't mean to be rude, but the question you are asking is like asking for a recipe for every different kind of baked good a bakery makes. Hire a trained, qualified brewmaster to help you formulate, or do the research yourself.

        he is right, there is hundreds of different ratios.... for each style even.... there are also probably some that haven't been invented yet, that is what makes a beer unique.... a good place to start and get some recipies and an idea of what your looking for is The HomeBrewers Bible..... it is a book that has good information and also quite a few recipies...
