  • WLP410 - Belgian Wit II trouble.....

    (Small brewpub, 10 bbl system, no lab)

    Been using WLP410 - Belgian wit II yeast for the past couple years and havent had any problems until recently. Only been able to get 3-4 pitches of the last two fresh pitches I bought. After the 4ish pitch, one of two things happens, one being it turns to a pleasant acidity or rarely it gets a distinctive butterscotchy/butter flavor, close in flavor to diacetyl but its not, got it tested at two local breweries for diacetyl.

    My mind is lost. pH levels are good, and nothing has changed in any of my regimes. All other beers have been great, just ones with this yeast.

    Basically anyone ever encounter something like this or have had trouble with this yeast. I had it once two years ago, but I blamed it on infection, and dumped the batch. but the last 4 batches have turned out this way (1 had the butterscotch and 3 the acidity type)
