  • Planning a 7bbl Brewery

    My partner and I are putting together a business plan for a 7bbl Brewery. Our objective is to serve 90% of our product on premises. My question is:

    How many fermentors/Brite tanks do we need? We would like to have 8-12 brews on tap at any given time. We were thinking 4 fermentors and 2 brite tanks. We would keg all batches and serve from kegs. Does this sound accurate?

    We have a 5bbl system with 10 on draught, serve everything from kegs.

    The two ways you can do it are kegs or serving tanks. They both have benefits and drawbacks.

    Kegs are easy. But you need a ton of them. Out of each 7bbl ferm you'll get 13. So if you want to run 12 beers you'll need atleast 130. The draw back is constantly washing kegs. It gets old. Kegs aren't cheap and you'll need a variety of sizes... 1/2 and 1/6

    Serving tanks are convenient. Only clean one vessel. Probably cooled by your glycol system so it eliminates the need for a huge walk in fridge. Draw back... You'll still need a few kegs for festivals.
