I've used Weyermann Carafa Special Type 3 (dehusked) in the past. Really like it. Unfortunately, my supplier is out of stock. Anyone have a recommended substitute?

You can substitute a like SRM of crystal malt - obviously it's not an exact match but it will work fine if the percentage of carafa III is low.

If you're looking for colour without burnt husk astringency, use midnight wheat. Or order some Carafa III from another supplier. You might be a loyal customer, but you're not married.

I've been using Black Prinz from Briess. It's 500L which is right in the range of the Carafa III.

I've been using Black Prinz from Briess. It's 500L which is right in the range of the Carafa III.

+1 for blackprinz or midnight wheat from Breiss. Both huskless so great color without the roast.

From BSG i was recommended perla negra from patagonia malting co. Its also dehusked but has a slightly lower lovibond at 320 or so.
Ive noticed it definitely gives more roasty flavors than carafa III but it definitely does the job for most brews.
