Just starting to brew big enough batches to buy bricks of dry yeast. If not using the entire brick, what are some good sanitary storage practices to follow? How do you guys store it?

Don't.
Fermentis states on the product data sheet to refrigerate below 4C and use within 7 days. IMHO if you cannot use the entire package of dry yeast immediately, then you should not use it later. Throw it away. Or use it for pizza. Why risk an off-fermentation for such a minimal cost?Phillip Kelm--Palau Brewing Company Manager--

we're in the same boat.. our 4bbl system would need a bit more than half a brick for each brew, but i go with the packets and typically do 24 packets per batch (each box has 38).. with harvesting and such a couple boxes really does last quite a long time in our breweryKevin

Same in Canada
I have a three barrel system in Canada and we are facing the same issues.
What kind of prices are you getting on the boxes of 11g packs? Lallemand only sells bricks in Canada at about $140 canadian or 110 usd. For Individual packs I have to go through a home brew store and they're about 50% more expensive per gram.
I don't want to leave open yeast around, but it might make more sense to use one brick over three days and two brew sessions.
Thought? Advice?

i'm not sure how much they cost since i just do the ordering, the owner gets the invoices.. we do order from Brewer's Supply Group so I'm sure if you give them a call they'll let you know.. I have only really been buying Fermentis from them though so i'm not sure what the availability of lallemand is..Kevin
