    Ornery Beer Company & Public House is creating a unique craft beer & dining destination near Potomac Mills Mall in Woodbridge, Va., a market underserved local craft breweries and brewpubs. Using experienced gained through over a decade of restaurant operations in this location & others in the Northern Virginia market, along with years as operational director of a polished casual brewpub, we are converting our existing restaurant into a new brewpub brand & concept.

    We will be laser focused on our meticulously crafted house brewed ales & lagers and assuring each is served in a fun, casual environment by a craft beer knowledgeable team, and paired with a chef driven, casual pub menu. To accomplish Ornery Beer Company's vision, the Executive Chef of the Public House must embody the casual brewpub experience, including:
    • Passionate and knowledgable about our beer, creative & unique pub faire, and how they are served together.
    • Craft beer-loving and enthusiastic about cooking & pairing with beer.
    • Embrace creative pub faire over entree driven menus.


    What we are not looking for: Executive or Head Chef experience that trumps Craft Beer & Pub Faire passion. We are more interested in your abilities and passion than your experience. We will have a strong team from our brewer, general manager, and ownership to work together in a team effort to build a successful brand. If you believe you are the right person to run the kitchen & menu of a professional but casual brewpub, lets talk!

    Timing for opening is Late May - Late June. We are interviewing now to find the right person to lead the Ornery Beer Company Public House.

    As an executive position, the fluid needs of the business and company will guide the Executive Chef job duties & requirements. This is intended to generally outline the needs of the position and company in a startup brewpub:

    Restaurant Operations
    • Apply your skills & experiences to create a menu collaboratively with executive management that is unique and creative which assures an inviting appeal that maintains a loyal and enthusiastic customer base.
    • Direct & manage BOH operations in a manner that assures a professional and well-run kitchen that puts the same high standards into every plate.
    • Work collaboratively with the General Manager and FOH team to assure an exceptional guest experience, proper costs, and cohesive operations.
    • Develop & Implement policies and procedures that meet or exceed health code, safety, and sanitary standards
    • Hire, Train, & Manage the BOH management team.
    • Develop & Implement hiring & training systems that will attract & retain the highest quality team members.
    • Develop & Implement ongoing repair, maintenance, & cleaning programs for all aspects of the BOH.
    • Hands on & active shift management that leads and manages by example while remaining in control in a high volume, demanding environment all while maintaining a positive, fun work environment.
    • Develop special events & beer dinners collaboratively with the Head Brewer & General Manager.


    Administrative & Business Management
    • Work collaboratively with the General Manager in developing and implementing food cost management & reporting systems.
    • Develop & Implement Inventory & Purchasing procedures that assure the highest quality and proper inventory levels for expected business.
    • Develop & Implement cost management systems including labor, supplies, and other restaurant level operating costs.
    • Assist with the development & implementation of systems that achieve financial & sales goals of the company.
    • Develop & maintain vendor accounts & relationships
    • Manage location level bookkeeping & accounting duties including Payroll, Invoice Management, Store level vendor payments.
    • Manage all areas of the Kitchen & BOH team.



    Skills, Experience, Requirements:
    • 2+ yrs experience in a full service, high volume kitchen as Head/Exec Chef or Exec/Lead Sous.
    • Professional culinary arts training or equivalent on-the-job training/history.
    • Successful & verifiable history of controllable costs results.
    • Knowledge or experience with the ingredients of beer, cooking with and pairing with craft beer.
    • Dynamic and assertive leadership skills and the ability to motivate teams.
    • Basic computer proficiency including MS Word & Excel.
    • Micros or similar Point of Sale systems.
    • Excellent verbal and written communication skills
    • Must be willing and able to pass background checks.
    • Desired but not required:
    • - Bilingual (English/Spanish)
    • - Cheftec or similar food costing systems is helpful but not requisite.
    • - Experience with Hot Schedules systems.
    • - Experience in all social media platforms
    • - CPR & First Aid trained.
