We are a tiny little nano but are buying our way into micro. I know everyone says don't go less than 7 bbl, but we can't fit a 7 system into our space (and we pay no rent here) and we already have a 5 bbl brite to go with our 1 1/2 bbl system and 2 1/2 - 3 bbl plastic fermenters, and we just do double and triple brew days. So we're going 5 bbl. But, should it be an open top or domed top brew kettle? We can get an insulated open top for the same price as a non-insulated dome top. I know eventually when we size up again we will have a closed top. Would anyone have any specific criteria that would dictate a choice now? Thanks for any input.
