Interesting thought. In other words no, I have not personally. My mixed gas experience is to carbonate the the required CO2 level, then as a secondary process, inject N2. The solubilities of CO2 and nitrogen are hugely different and the high nitrogen content in the mixed gas will not fully dissolve, but will help to strip out the CO2 once the beer is saturated with nitrogen.
Let's say the beer temperature is one deg C, if the CO2 content is 5 g / litre (2.5 vol/vol), then the maximum dissolved nitrogen content is about 14 ppm.
Having worked at companies producing nitrokeg beers such as stouts, if use of mixed gas to achieve consistent levels was possible, then these guys would have done it. Don't forget also that you will be starting with a base level of dissolved CO2, and this ius likely to affect the amount of N2 dissolved using this method.dick
