Lauter Tun design:
Im looking at 20bbl Lauter tuns with knifes + rake, flat bottoms and under-screen wash-heads. Those of you with 15-30bbl systems, what are the size and number of draw-off points you have (and who manufactured the tun)? Would 4, 1" ports be enough? Is it mostly flat, or have some dish/slope for a larger center drain?

The two systems I've worked with both had very shallow cone-bottoms with one central draw-off point. 20bbl. JV Northwest had 2" diameter draw, and 15bbl. Pub tun had a 1 1/2" draw. Of course neither had a raking system.

For bigger tuns, the common wisdom is that you should have one draw-off per 1-1.5 square meters of flat-bottom surface area (e.g., from Kunze: "A run-off opening with a run-off cone is provided in every 1 m2"; from Briggs: "The wort collection tubes in the true base may be spaced 1 / 1.2-1.5m2").

I would think 4 x 1" ports would be more than enough for a 20bbl. tun, providing the same collection "area" (4 x 0.5in.2 x 3.142 = 3.142in.2) as one 2" port (1in.2 x 3.142).
