  • conditioning in the fermenter

We currently have a small commercial brewery/brewpub with a 3bbl brewhouse, two 3bbl fermentors and a 3bbl brite. We have only been brewing since November, and as we all know the beer business is good. We are looking to make some purchases in the near future to expand our capacity, so our next purchase is to be a 6bbl fermentor. In the interest of resources and space required, how do y'all feel about conditioning in the fermentor, rather than transferring to the brite for conditioning? This would save us a considerable amount (obviously), and would even allow us to invest in a second fermentor in place of the brite tank.

Any input appreciated before we spend our hard earned money!

Plenty of breweries do this. Just make sure the FV is spec'ed appropriately. You won't clear as well as you may in a bbt, but it's certainly an option, especially if it increases your capacity 150% instead of 75% for the same cost.
