Our Cellarman/Shift Brewer performs responsibilities in both brewing and cellaring tasks.
This position, when operating in the cellarman role, will execute all areas of beer clarification, processing, transferring and conditioning, fermentation monitoring, fermentation and finishing vessel cleaning and maintenance, cellar equipment cleaning and maintenance, as well as beer treatments and additions. The shift brewer role works to produce the highest quality wort while closely following all standard operating procedures (SOP), from malt to fermenter.
This position will rotate through all facets of day-to-day operation, from the processing of raw materials to the processing and delivery of the final product to the packaging team. The scope of job duties includes but is not limited to brewing, cellar work, centrifuging, barrel room operation, CIP, and cleaning.
This position reports to Cellar Manager and Production Manager.
Responsibilities:
Cellarman
Transferring of beer via hard and soft piping to finishing vessels
Cleaning and maintaining fermentation and finishing vessels according to standard operating procedures
Clarifying of beer via centrifuge or other clarifying agent (i.e. colloidal silica) according to standard operating procedures
Record keeping of transfer yields, treatments, or different procedures done to product
Perform lab testing on beer such as testing gravity, yeast counting, and yeast viability assessment
Daily monitoring of fermentations
Application of treatments such as hops, wood, or other additives according to standard operating procedures
Troubleshoot equipment and quality issues with team
Monitor and correct the carbonation of beer prior to packaging
Operate cellar equipment such as pumps, centrifuge, and barrel fillers
Continual moving, lifting, and manipulation of hoses, buckets, pumps, and other parts that require extended standing, lifting, crouching, and walking throughout shift
Assemble and break down appropriate hose and part configuration depending on process
Adjust fermentation vessel temperatures in accordance to standard operating procedures
Communicate well within team
Cleaning and maintaining cellar equipment such as centrifuge and carbonation stones.
Uphold quality standards
Maintenance, filling, and emptying of barrels
Lead by example and represent Cigar City Brewing positively and responsibly at all times
Shift Brewer
Maintain all quality standards set for the production of wort for all styles of CCB beer
Must feel comfortable multi-tasking, while keeping a high degree of attention to detail
The ability to carry out all wort production, CIP, and yeast pitching SOP’s
Daily tastings of beers in process, and tasting of packaged beers at home to maintain a high degree of brand recognition
To help out fellow team members in any way necessary, when available
Education and Certification
Associate’s Degree or higher in related field or Trade education is preferred
Experience and Skills
Ability to multitask and adjust to changing priorities
Minimum of 2 years brewing and/or Cellar experience
Ability to work varied shifts
Proper use of PPE
Mechanical aptitude
Attention to detail
Open Availability including nights, weekends and holidays.
Must be able to lift 50 lbs, push or pull 150 lbs.
Must be able to work on your feet for 8 hours.
Must be able to crouch, bend, lift and reach
Must be able to work in hot, wet and loud environment
Must be able to work around steam, electricity, harsh chemicals and solvents
