  • SOG's for brewery processes

    We are a start up in Florida, I am putting together a Standard Operating Guideline for all the processes in the brewery, is there a place that has the industry standards for brewery operations such as CIP, transfers, crashing, keg washing/filling, and overall safety. Wanted to make sure we are going to be following the industry standard. Any info would be appreciated.

    Because every brewery is different to some extent, particularly when they have been built from scratch by the brewer, rather than bough "off the shelf", there is, to the best of my knowledge, no set of standard operating procedures. The other problem is that they need to be broken down into what are logical process for the specific brewery and the products being brewed. Of course, if you bought kit from a supplier, rather than building it up yourself from scratch, the manufacturer should provide operating and maintenance guidelines. There are guidelines for developing HACCP plans, and the local H&S guys will help you identify what needs to be covered, and in how much detail. The local authorities / tax people should be able to supply details of statutory requirements in terms of analysis and other compliance.

    A good start will be to have a chat with a couple of local brewers, and / or get help from a competent consultant.
