  • 1s Run at Carbonating off of a 4 BBL Brite

    I am part of a small nano brewery attempting to carbonate our first 2 barrel batch tomorrow. Need some help:

    - We have a head brewer and he has this process down but I am completely in the dark (I handle all the business ops side).
    - I want to learn myself and from a third party so I can be knowledgeable and provide my own thoughts
    - So we have 4BBL unjacketed brite tank in a cooler right now at 34 degrees
    - We brewed 66 gallons an amber ale
    - Primary fermentation at 66 degrees (plastic fermenters)
    - Moved it to a secondary at 34 (plastic fermenters)
    - Now we are going to move it to our brite tomorrow and carbonate
    - We would like to carbonate as fast as possible
    - We have a 6" carb stone and a pressure release valve
    - Our target PSI is 2.2 - 2.6
    - Our tank is specd at 15 but can hold up to 30 PSI

    My question is this:
    - Can we start out carbing at 6PSI? Any experience of how long it would take or do we just keep testing every hour?

    After we get it to our proper carb levels we are going to move over to sanke 4 keg rack and fill from there in to 1/6 barrels.

    For you temp and desired volumes of co2, you will need something between 8 and 12 psi.
