    I am lucky enough to work on a unit and have specific questions about the "Split DMS" and "Strip DMS" recipe program steps. I am curious as to how adjusting length of each of those cycles will affect the overall beer. Cheers!

    We use a Braukon in the US with north american base malts, and don't use the DMS steps. We have no DMS issues on any of our beers. Depending on how modified your malt is, as long as the last 15-20 minutes of boil is vigorous you shouldn't get DMS. From my experience the Split DMS steps do more as an energy savings by turning off the kettle steam, than change flavor.
