  • fresh fruit in secondary fermenter?

    Last minute decision to make a rasberry Belgian Dubble. I want to use fresh fruit, not extract.

    It has been in secondary for about 2 weeks now and I don't know if it is too late.

    Any thoughts are appreciated.

      And get some pectic enzyme from C&B and add that too if the clarity and/or ease of filtration will be an issue.
