Collier Brewing Company, LLC is currently seeking a Head Brewer to oversee all aspects of brewery production and daily operation of a 15BBL brew house. We are a start-up brewery located near Naples in Ave Maria, FL that has partnered with a popular restaurant chain and will produce approximately 2,000 BBL in the first year. Our ideal candidate should be considered a leader among peers, innovative, self-driven, with a positive attitude and a minimum of 5 years experience in a commercial brewing environment. A strict adherence to quality and consistency is key, as well as a proven commitment to accurate and thorough record keeping.
Responsibilities for this position include:
• Brewhouse operation (3 vessel, 15 bbl, designed to expand to 4 vessel)
• Vigilantly monitor and manage fermentation and yeast performance, including taking and documenting daily readings.
• Transfers, FV and BBT CIP
• Keg cleaning, filling, inventory and maintenance
• Development and maintenance of production schedule
• Assist with development of Standard Operating Procedures (SOPs) to reflect brewing processes, OSHA standards and clean-in-place (CIP) procedures.
• Supervise and train employees in the use of equipment or production techniques
• Maintain an adequate supply of ingredients and supplies to keep up with production and balance cost and cash flow considerations
• Assist in QA/QC program and conducting routine QC protocols.
• Schedule and oversee the maintenance of equipment
• Ensure downstream customer satisfaction (packaging, logistics and distribution).
• Recipe replication and recipe development/scaling
• Receiving and inventory of raw goods and packaging materials
• Maintain constant communication with operations management team on any issues and their development
• Provide a safe and clean environment for brewery tours, events and fellow employees
• Complete OSHA required training and OSHA required polices (i.e., permit required confined spaces, lockout/tagout, etc.).
• Develop and maintain receiving, warehousing, and distribution processes to ensure timely and accurate movement of goods.
• Assist in design and development of branding.
• Serve as Ambassador to the brand at events, festivals promotions and brewery tours.
• Maintain accurate and current inventory records by ensuring that information is recorded in the brewery software.
• Coordinate with accounting department to reconcile any inventory discrepancies.
Candidates must have the following qualities to be considered:
• Excellent verbal and written communication skills
• Fluency with Microsoft Office
• An unyielding dedication to cleanliness
• Proven and natural ability to work cooperatively with others in a manner that both achieves efficiency and promotes teamwork
• Experience as head or assistant brewer
• Experience with a 10BBL (or larger) brew house
• A working knowledge of lab procedures including but not limited to cell counting/viability testing, D.O., CO2 and packaged air testing, gram staining and microbiological analysis and all aspects of wort analysis
• Experience with quality control, yeast management and brewery costs
• Formal professional brewing program education and/or certification strongly preferred (e.g., Siebel, MBAA, ABG, ASBC, etc.)
• Knowledge of all of the following - fermentation theory/practice, biochemical/chemical changes in product from raw materials to finished product, bitterness, color and alcohol percentage assays
• A working knowledge of HVAC, plumbing and electrical, and any mastery is highly preferred
• College education is a plus
• Dedication to continuous improvement and a desire to learn more about brewing theory and technology
• Physical strength to lift 55-lbs and maneuver 175-lb kegs repeatedly
• Ability to stand 8-10 hours per day. Long periods of walking, bending, kneeling, climbing and maneuvering are required
• Ability to work safely in various conditions, with hazardous chemicals, handling of hazardous materials, exposure to hot fluids, exposure to pressurized vessels and transfer lines
• Flexible work schedule – possible nights and weekends
• Ability to work unsupervised and manage time effectively
• Forklift certification preferred
