EAST COAST BREWING COMPANY situated in Umkomaas, South Africa, is searching for a Head Brewer responsible for the operation, production and maintenance of our 40HL GEA brewery. This is a great opportunity for a brewer looking to practice his craft abroad.
Essential Job Duties:
• Work an entire brewery from raw material ordering, brewing, fermentation, lagering, kegging and bottling. We are looking for a passionate brewer!
• Ability to operate a 40 HL brew system.
• Oversee all aspects of wort production, including inventory control,
Handling raw materials, operating a brewhouse, transferring, vessel
and heat exchanger CIP.
• Start up and shut down of facility processes
• Management of fermenters and yeast, including cropping, starters, pitch rates, cell counts, generation tracking.
• Manage cellar production, including gravity, pressure, pH, and temperature.
• Transferring beer and filtering, tank dumps, carbonation, fining.
• CIP, sanitization, temperature monitoring.
• Monitor quality parameters and work to resolve issues should they arise.
• Maintain brew house vessels in tour worthy condition according to our BRC quality standards.
• Must be able to work as a team with other members of the production staff.
• Taproom servicing and line cleaning
• Ability to work in loud, noisy, slippery, hot, humid, environments for extended periods of time although our 1500 square meter facility is rather comfortable.
• Ability to work safely around hazardous chemicals, high voltage, hot liquids, compressed gases, pressurized vessels, etc.
• Must be able to operate a forklift
• Must understand all chemicals used in the brewing process and safeguards in handling
• Must understand the MSDS/SDS and instruct others in safe handling and proper use of all chemicals.
• Have a clean driving record.
• Maintenance of cooperage and equipment, as well as supervision of outside contractors.
• Design and implement production schedules, ingredient selection, and record keeping.
• Design and implementation of quality control program with SOPs.
• Design and implement a wild and barrel aging program with SOPs.• Scale up existing recipes as well as recipe formulation and brewing of pilot batches on our SABCO Brew Magic System.
• Submit required excise tax paperwork on a regular basis.
• Deliver kegs to key accounts and perform basic tap system maintenance.
• Represent the brewery and its brand at various events such as trade shows, festivals, etc.
• Must be flexible with your schedule (we work weekends, late nights,etc).
Administrative and Other Duties:
• Daily tracking of all transfer of beer for Inventory/TTB reporting
• Inventory of all beer related products (materials, bottles, beer in tanks, etc.)
• Work with owner in purchasing, ordering, and receiving raw materials.
• Interact and educate guests occasionally.
• Occasional Festival support. Supervisor Responsibility:
• Responsible for supervision, scheduling, training of Brewers and Brewery Assistants.
Physical Requirements:
• Must be able to stand, walk, stoop, bend, twist, knee and reach over head.
• Ability to lift / move full kegs (+/- 40kg)
Housing will be supplied on the secure estate.
