    Job Summary
    The BMBC Executive Chef is responsible for developing and executing an innovative and exciting menu that parallels the quality Blue Moon’s premium beers. She/he works closely with local farmers and purveyors, to source regional and hand-crafted ingredients, and create menu items that change daily and seasonally. The BMBC Executive Chef is accountable for staffing, scheduling, and supervising an elite kitchen team that excels in a fast-pace, high-volume, high-energy restaurant. She/he leads by example, demonstrating proper cooking techniques, as well as safety and cleanliness standards. The Executive Chef reports directly to BMBC’s General Manager, and will also work closely with the brewing team to ensure food and beers complement each other. She/he is responsible for developing tasting items and menus for special dinners, VIP tours, and group events. The Executive Chef is accountable for maintaining reasonable food costs, and reducing food waste. The BMBC Executive Chef is willing to roll his/her sleeves up and do what it takes to get the job done.

    Job Description
    Menu Development
    •Deliver a fun and creative menu that elevates the standards for traditional brewery fare
    •Gain recognition in the Denver culinary scene
    •Source local handcrafted ingredients that align the menus with the Blue Moon Face Place and Story
    • Ensure the menu remains enticing and does not become stagnate
    •Work closely with head brewmaster to ensure the right beer and food pairings to drive increase revenue

    Kitchen Staff Management
    •Lead and develop a talented kitchen team, with minimal staff turnover
    •Identify opportunities for area chefs to stage
    •Provide opportunity for additional training and development to ensure kitchen staff is current with latest trends to drive repeat customer business

    Inventory Management
    •Maintain lean food costs
    •Ensure freshness and quality of ingredients
    •Minimize waste expense
    •Partner with Controller to ensure proper inventory levels with in allocated budget
    •Ensure compliance with MillerCoors procurement policy

    Training and Development
    •Strive to continuously improve the skills and aptitude of the kitchen staff
    •Continue to increase individual professional development and skills
    •Educate Resultant Staff on menu items (Daily, Seasonal, Special Events)

    Special Events
    •Prepare tasting menus, beer pairing menus, VIP tour menu items
    •Prepare multi-course meals for private parties
    •Collaborate with head brewmaster to ensure alignment on menu and beers for all events

    Preferred Qualifications Requirements
    Education and Experience
    •Bachelor’s degree
    •Culinary degree
    •5 plus years leading a high-volume kitchen
    •Prefer candidates from the Denver region who are already familiar with local purveyors and farmers

    Skills and Knowledge
    •Leadership and emotional intelligence
    •Deep understanding of food costs and margins
    •Ability to efficiently and cost-effectively run a lean kitchen
    •Strong inventory management and ability to minimize waste expense
    •Prefer deep knowledge of beer styles
    •Prefer a candidate comfortable using ALHOA pos systems
    •Prefer strong expediting skills
    •Prefer confident working all stations on the line

    Other requirements
    •Brings a diverse portfolio of recipes from a variety of styles and influences
    •Stays calm and works well under pressure and deadlines
