    PYRAMID AND PORTLAND BREWERIES:
    For over 30 years, we have been making a family of craft beers including Pyramid and Portland Brewing brands in Seattle and Portland. Our brewery in Seattle is located at the Seattle Alehouse across the street from Safeco field. Our brewery in Portland is located in the NW Industrial area in Portland, Oregon next door to our MacTarnahan’s Taproom. We are part of the North American Brewery family of beers.


    POSITION SUMMARY
    The Brewing Apprentice is responsible for assisting the Head Brewer in all or part of all brewing and production processes; including brewing and cellaring, shipping and receiving, production, quality, adherence to all safety and food safety standards, and record keeping. The Brewing Apprentice will report to the Head Brewer.


    ESSENTIAL FUNCTIONS AND RESPONSIBILITIES
    • Assists with brewing operations at the brewery, including: day-to-day process issues, recipe management, operating policies, procedures, release parameters, and safety policies.
    • Enforce the policies and procedures of the organization.
    • Ensure that proper samples of raw materials, in-process and finished product are collected and analyzed appropriately to ensure a quality finished product in coordination with the Head Brewer.
    • Ensure the cleanliness and sterilization of tanks, screens, inflow pipes, production areas, and equipment, using hoses, brushes, scrapers, or chemical solutions.
    • Responsible for following comprehensive Standard Operating Procedures with full documentation for brewing and cellar operations including malt handling, wort production, fermentation, yeast handling, liquid transfer, fining, colloidal stabilization, filtration, carbonation, keg cleaning/filling, and coding.
    • Maintain detailed records of raw materials, quality checks and production stage timings. Maintain accurate brewing records.
    • Perform shipping and receiving duties and proper documentation of these functions.
    • Data entry involving use of Excel as well as the ERP system.
    • Report functionality and maintenance of brewing equipment, CIP equipment, water delivery equipment, and sewer related systems to the Head Brewer.
    • In absence of Head Brewer, approve product for release based on quantitative and qualitative parameters falling within operating and exception limits. Work with Head Brewer to resolve product problems.

    ADDITIONAL FUNCTIONS AND RESPONSIBILITIES
    • Manage operation in Head Brewer’s absence
    • Support the Head Brewer to interact with the public as needed at brewer’s dinners, sampling events, and brewery tours.

    PERFORMANCE STANDARDS
    • Capability to understand brewing and manufacturing practices of a small batch “pub” system and equipment, processes, materials flow and organizational requirements.

    SKILLS
    • Technical aptitude, especially related to brewing equipment including equipment maintenance – performing routine maintenance on equipment and determining when and what kind of maintenance is needed.
    • Understanding of intermediate level science, especially biology and chemistry.
    • Strong computer proficiency, especially spreadsheet design and use.
    • Excellent verbal and written communication skills.
    • Strong public relations skills.
    • Knowledge of office equipment such as fax machines, photocopiers, computers, telephone and voicemail system
    • Understanding written sentences and paragraphs in work-related documents.
    • Troubleshooting skills.

    LICENSES AND/OR CERTIFICATIONS
    • Forklift certification to be provided by company.

    EXPERIENCE AND EDUCATION
    • High school diploma preferred.

    LIST THE EQUIPMENT WITH WHICH YOU MUST BE FAMILIAR, OR ARE REQUIRED TO OPERATE OR USE
    • 2-vessel brew house with water and CIP systems.
    • 4-roller malt mill and malt transfer system.
    • Pumps: centrifugal, diaphragm, peristaltic, rotary
    • Dissolved gas analyzers: CO2, O2 and N2
    • Flow meters
    • Pinpoint carbonator
    • Cartridge air filters
    • Laboratory equipment: centrifuge, digital density meter, spectrophotometer, microscope
    • Ferment vessels and other holding tanks
    • Pressure/temperature gauges and instrumentation
    • Gas regulators
    • Process and utility piping network
    • Forklift
    • Scissors lift

    PHYSICAL REQUIREMENTS
    • Able to lift heavy materials (minimum 55 lb. boxes should high up to 50 times daily).
    • Able to climb ladders. Ladder climbing over 20 feet. Able to perform job while standing on a ladder.
    • Occasional work on tanks over 23 feet high.
    • Able to work in wet, tight or cramped spaces.
    • Able to work in an environment with high noise levels.
    • Able to work with hazardous chemicals.
    • Able to frequently duck under conveyors/equipment.
    • Able to occasionally climb stairs.
    • Able to work in awkward positions for extended periods of time.
    • Able to frequently grasp with one or both hands.
    • Able to wear Personal Protective Equipment (respirators, ear plugs, boots, etc.)

    ENVIRONMENTAL CONDITIONS
    • Handling of hazardous materials.
    • Exposure to hot fluids.
    • Exposure to live steam.
    • Exposure to pressurized vessels and transfer lines.
    • Exposure to particulate atmospheres (respirator required).
    • Exposure to extremely variable temperature levels.
